Meat and Fish Processing Facilities

You will learn to process beef and lamb in our commercial meat and fish processing facilities at Epping Campus.

Native fish processing

You’ll also learn the skills to process Australian native fish, cultured at our Aquaculture Training and Applied Research Centre.

Our facilities for agricultural and hospitality students at Melbourne Polytechnic embody our farm-to-plate and pond-to-plate food ethos and underlying emphasis on sustainability and local eating.

Commercial-grade facilities

You’ll practice processing fresh, farmed meat and fish in facilities complete with a commercial scale boning room, chillers, meat packing facility and industry-standard vacuum packing and sausage-making equipment. Transformed into food products, this meat and fish will be prepared and served at our St Georges Restaurant and The Apprentice Restaurant.

You’ll benefit from this industry experience, training in high-standard facilities where all meat and fish products are completely traceable and produced exclusively at Melbourne Polytechnic’s own facilities.
